Artichokes with whipped lemon butter is a delicious and healthy keto friendly recipe. It's a perfect side dish or appetizer that is not only easy to prepare but also packed with nutrients.

  1. Cut the stems off the artichokes and trim the tips of the leaves. Rinse them under cold water.
  2. Place the artichokes stem-side down in a pot and pour in the water. Cover and simmer for about 25-35 minutes, or until the leaves can be easily pulled off.
  3. While the artichokes are cooking, melt the butter in a small saucepan over medium heat. Once melted, remove from heat and whisk in the lemon juice. Season with salt and pepper.
  4. Once the artichokes are done, drain them and let them cool for a few minutes.
  5. Serve the artichokes with the whipped lemon butter on the side for dipping.
