Baked Artichokes is a delicious and healthy keto friendly recipe. It is a perfect side dish or appetizer that is not only easy to prepare but also packed with nutrients.
Ingredients[edit | edit source]
- 2 whole artichokes
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 lemon, juiced
- Salt and pepper to taste
- 1/4 cup Parmesan cheese, grated
Instructions[edit | edit source]
- Preheat your oven to 375 degrees Fahrenheit.
- Trim the stems and the tops of the artichokes. Remove the outer tough leaves.
- In a small bowl, combine the olive oil, minced garlic, lemon juice, salt, and pepper.
- Drizzle the olive oil mixture over the artichokes, making sure to get it in between the leaves.
- Wrap each artichoke in foil and place them on a baking sheet.
- Bake for about 60 minutes, or until the leaves can be easily removed.
- Remove from the oven and sprinkle with grated Parmesan cheese before serving.
