Baked Eggplant with Chorizo and Avocado Sauce is a delicious and nutritious keto friendly dish. It combines the rich flavors of eggplant, chorizo, and a creamy avocado sauce.

Instructions[edit | edit source]

  1. Preheat your oven to 200°C (392°F).
  2. Cut the eggplants in half lengthwise and score the flesh in a crisscross pattern.
  3. Drizzle the eggplants with 1 tbsp of olive oil and season with salt and pepper.
  4. Place the eggplants in the oven and bake for 20-25 minutes, or until the flesh is soft.
  5. While the eggplants are baking, slice the chorizo and fry in a pan over medium heat until crispy.
  6. For the avocado sauce, blend the avocados, garlic, lime juice, remaining olive oil, and salt and pepper in a food processor until smooth.
  7. Once the eggplants are done, top with the crispy chorizo and drizzle with the avocado sauce.
