Baked Eggplant with Chorizo and Avocado Sauce is a delicious and nutritious keto friendly dish. It combines the rich flavors of eggplant, chorizo, and a creamy avocado sauce.
Ingredients[edit | edit source]
- 2 medium eggplant
- 200g chorizo
- 2 ripe avocado
- 2 cloves garlic
- 1 lime, juiced
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions[edit | edit source]
- Preheat your oven to 200°C (392°F).
- Cut the eggplants in half lengthwise and score the flesh in a crisscross pattern.
- Drizzle the eggplants with 1 tbsp of olive oil and season with salt and pepper.
- Place the eggplants in the oven and bake for 20-25 minutes, or until the flesh is soft.
- While the eggplants are baking, slice the chorizo and fry in a pan over medium heat until crispy.
- For the avocado sauce, blend the avocados, garlic, lime juice, remaining olive oil, and salt and pepper in a food processor until smooth.
- Once the eggplants are done, top with the crispy chorizo and drizzle with the avocado sauce.
