Browned Butter Cauliflower Mash is a delicious, keto-friendly side dish that is easy to prepare and packed with flavor. This recipe serves 4.
Ingredients[edit | edit source]
- 1 large cauliflower head, cut into florets
- 4 tablespoons butter
- 2 cloves garlic, minced
- 1/4 cup heavy cream
- Salt and pepper to taste
- Fresh chives, chopped (for garnish)
Instructions[edit | edit source]
- Steam the cauliflower florets until they are very tender.
- While the cauliflower is steaming, melt the butter in a small saucepan over medium heat. Continue to cook the butter, stirring occasionally, until it turns a golden brown color and has a nutty aroma.
- Add the minced garlic to the browned butter and sauté until fragrant.
- Once the cauliflower is tender, drain it well and transfer it to a food processor.
- Add the browned butter and garlic mixture, heavy cream, salt, and pepper to the food processor.
- Process until the mixture is smooth and creamy.
- Taste and adjust the seasoning as needed.
- Transfer the cauliflower mash to a serving dish and garnish with chopped chives.
