Cauliflower Slaw is a delicious and healthy keto-friendly recipe. It's a great alternative to traditional coleslaw, using cauliflower instead of cabbage. This recipe is easy to prepare and packed with nutrients.
Ingredients[edit | edit source]
- 1 large cauliflower, cut into florets
- 1/2 cup mayonnaise
- 1/4 cup apple cider vinegar
- 1 tablespoon Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup finely chopped red onion
- 1/2 cup chopped parsley
Instructions[edit | edit source]
- Place the cauliflower florets in a food processor and pulse until they are finely chopped and resemble rice.
- In a large bowl, combine the mayonnaise, apple cider vinegar, Dijon mustard, salt, and black pepper. Stir until well combined.
- Add the chopped cauliflower, red onion, and parsley to the bowl. Toss until all the ingredients are well coated in the dressing.
- Cover the bowl and refrigerate for at least 1 hour before serving to allow the flavors to meld together.
