  1. In a large skillet, cook the ground beef over medium heat until no longer pink. Drain the excess fat.
  2. Add the chopped onion and bell pepper to the skillet. Cook until the vegetables are softened.
  3. Stir in the diced tomatoes with green chilies and taco seasoning. Bring the mixture to a simmer and cook for 5 minutes.
  4. Sprinkle the shredded cheddar cheese over the top of the beef mixture. Cover the skillet and cook until the cheese is melted.
  5. Garnish with chopped cilantro before serving. Season with salt and pepper to taste.
