Chicken satay sauce
Chicken Satay Sauce (Keto Friendly)[edit | edit source]
Ingredients[edit | edit source]
- Chicken breast (500g)
- Coconut milk (1 cup)
- Peanut butter (sugar-free, 2 tablespoons)
- Soy sauce (low sodium, 2 tablespoons)
- Garlic (2 cloves, minced)
- Ginger (1 tablespoon, grated)
- Lime juice (1 tablespoon)
- Chili flakes (1/2 teaspoon)
- Coriander leaves (for garnish)
- Salt and pepper (to taste)
Instructions[edit | edit source]
- Cut the chicken into small pieces and season with salt and pepper.
- In a bowl, mix together the coconut milk, peanut butter, soy sauce, minced garlic, grated ginger, lime juice, and chili flakes.
- Pour the sauce over the chicken and let it marinate for at least 30 minutes.
- Heat a grill pan over medium heat. Add the chicken pieces and cook for 5-7 minutes on each side, or until the chicken is cooked through.
- Pour the remaining sauce over the chicken and let it simmer for a few minutes until the sauce thickens.
- Garnish with coriander leaves before serving.
