Chili Salmon with Tomato and Asparagus[edit | edit source]
This is a delicious and healthy keto friendly recipe that is easy to prepare and packed with flavor.
Ingredients[edit | edit source]
- 4 salmon fillets
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- Salt and pepper to taste
- 2 cups asparagus spears, trimmed
- 2 tomatoes, diced
- 1 garlic clove, minced
- 1 tablespoon lemon juice
Instructions[edit | edit source]
- Preheat your oven to 400 degrees F (200 degrees C).
- Rub the salmon fillets with olive oil, chili powder, salt, and pepper.
- Place the salmon on a baking sheet and bake for 15-20 minutes, or until the salmon is cooked to your desired level of doneness.
- While the salmon is baking, heat a pan over medium heat.
- Add the asparagus to the pan and cook for 5-7 minutes, or until tender.
- Add the tomatoes, garlic, and lemon juice to the pan and cook for another 2-3 minutes.
- Serve the salmon with the asparagus and tomato mixture on the side.
