This is a delicious and creamy dairy-free vanilla ice cream that is perfect for those following a keto diet. It's easy to make and is a great way to satisfy your sweet tooth while still sticking to your diet.

  1. Chill the cans of coconut milk in the refrigerator overnight.
  2. The next day, open the cans and scoop out the solid coconut cream into a blender. Save the liquid for another use.
  3. Add the erythritol, vanilla extract, and xanthan gum (if using) to the blender.
  4. Blend until smooth and creamy.
  5. Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions.
  6. Once the ice cream has reached a soft-serve consistency, transfer it to a lidded container and freeze for at least 4 hours, or until firm.
  7. Serve and enjoy!
