Creamy Low Carb Cauliflower Risotto with Spinach and Goat Cheese[edit | edit source]
Ingredients[edit | edit source]
- 1 large cauliflower, cut into florets
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 cup spinach, chopped
- 1/2 cup goat cheese, crumbled
- Salt and pepper to taste
Instructions[edit | edit source]
- Start by processing the cauliflower in a food processor until it resembles rice.
- Heat the olive oil in a large pan over medium heat. Add the onion and garlic, sauté until the onion is translucent.
- Add the cauliflower rice to the pan, stir well to combine with the onion and garlic. Cook for about 5 minutes, until the cauliflower is tender.
- Add the chopped spinach to the pan, stir well to combine. Cook for another 2-3 minutes, until the spinach is wilted.
- Remove the pan from the heat, add the crumbled goat cheese. Stir well until the cheese is melted and creamy. Season with salt and pepper to taste.
- Serve the cauliflower risotto warm.
