  1. Start by processing the cauliflower in a food processor until it resembles rice.
  2. Heat the olive oil in a large pan over medium heat. Add the onion and garlic, sauté until the onion is translucent.
  3. Add the cauliflower rice to the pan, stir well to combine with the onion and garlic. Cook for about 5 minutes, until the cauliflower is tender.
  4. Add the chopped spinach to the pan, stir well to combine. Cook for another 2-3 minutes, until the spinach is wilted.
  5. Remove the pan from the heat, add the crumbled goat cheese. Stir well until the cheese is melted and creamy. Season with salt and pepper to taste.
  6. Serve the cauliflower risotto warm.
