This is a recipe for a creamy, delicious, and keto-friendly rice pudding. It's a perfect dessert for those following a keto diet.
Ingredients[edit | edit source]
- 1 cup of cauliflower rice
- 1 cup of almond milk
- 1/4 cup of erythritol
- 1/2 teaspoon of vanilla extract
- 1/2 teaspoon of cinnamon
- 1/4 cup of heavy cream
- A pinch of salt
Instructions[edit | edit source]
- Start by heating the almond milk in a saucepan over medium heat.
- Add the cauliflower rice to the saucepan and cook for about 10 minutes, or until the cauliflower is soft.
- Stir in the erythritol, vanilla extract, cinnamon, and salt.
- Reduce the heat to low and stir in the heavy cream.
- Continue to cook for another 5 minutes, or until the pudding has thickened to your liking.
- Serve warm and enjoy!
