Creamy Tuscan Shrimp[edit | edit source]
A delicious and easy to prepare keto friendly recipe, Creamy Tuscan Shrimp is a perfect dish for those who are following a low-carb diet.
Ingredients[edit | edit source]
- 1 lb shrimp, peeled and deveined
- 1 tablespoon olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 cup spinach
- 1/2 cup sun-dried tomatoes, chopped
- 1/2 cup Parmesan cheese, grated
- Salt and pepper to taste
Instructions[edit | edit source]
- Heat the olive oil in a large skillet over medium heat. Add the shrimp and cook until pink. Remove the shrimp from the skillet and set aside.
- In the same skillet, add the minced garlic and cook until fragrant.
- Add the heavy cream, chicken broth, spinach, sun-dried tomatoes, and Parmesan cheese to the skillet. Stir to combine and bring to a simmer.
- Return the shrimp to the skillet and stir to coat in the sauce. Cook for an additional 2-3 minutes, until the shrimp is heated through.
- Season with salt and pepper to taste. Serve hot.
