This is a delicious and healthy recipe for a Crispy Brussels Sprout Salad with Lemon, perfect for those following a keto diet.
Ingredients[edit | edit source]
- 1 lb of Brussels sprouts
- 2 tablespoons of olive oil
- Salt and pepper to taste
- 1 lemon, juiced
- 1 tablespoon of Dijon mustard
- 1 clove of garlic, minced
- 1/4 cup of Parmesan cheese, grated
- 1/4 cup of almonds, chopped
Instructions[edit | edit source]
- Preheat your oven to 400 degrees F (200 degrees C).
- Trim the ends off the Brussels sprouts and cut them in half. Toss them in a bowl with the olive oil, salt, and pepper.
- Spread the Brussels sprouts out on a baking sheet and roast for 20-25 minutes, until crispy and browned.
- While the Brussels sprouts are roasting, make the dressing. In a small bowl, whisk together the lemon juice, Dijon mustard, and garlic.
- Once the Brussels sprouts are done, let them cool slightly before tossing them in the dressing.
- Top the salad with the grated Parmesan cheese and chopped almonds before serving.
