This is a delicious and healthy recipe for a Crispy Brussels Sprout Salad with Lemon, perfect for those following a keto diet.

  1. Preheat your oven to 400 degrees F (200 degrees C).
  2. Trim the ends off the Brussels sprouts and cut them in half. Toss them in a bowl with the olive oil, salt, and pepper.
  3. Spread the Brussels sprouts out on a baking sheet and roast for 20-25 minutes, until crispy and browned.
  4. While the Brussels sprouts are roasting, make the dressing. In a small bowl, whisk together the lemon juice, Dijon mustard, and garlic.
  5. Once the Brussels sprouts are done, let them cool slightly before tossing them in the dressing.
  6. Top the salad with the grated Parmesan cheese and chopped almonds before serving.
