Instructions[edit | edit source]

  1. Preheat your oven to 400 degrees F (200 degrees C).
  2. Season the chicken thighs with salt and pepper.
  3. Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the chicken, skin-side down, and cook until the skin is crispy and golden brown, about 5 minutes. Flip the chicken and cook for an additional 5 minutes.
  4. Transfer the skillet to the preheated oven and bake until the chicken is cooked through, about 15 minutes.
  5. While the chicken is baking, prepare the sauce. In a small saucepan, combine the garlic, lemon juice, and chicken broth. Bring to a simmer over medium heat and cook until reduced by half, about 10 minutes.
  6. Remove the saucepan from the heat and whisk in the butter, capers, and parsley. Season with additional salt and pepper to taste.
  7. Once the chicken is done, remove from the oven and drizzle with the lemon butter caper sauce. Serve immediately.
