Crunchy Keto Chicken Drumsticks with Coleslaw[edit | edit source]

  1. Preheat your oven to 200°C (390°F).
  2. In a bowl, mix together the almond flour, paprika, garlic powder, onion powder, salt, and pepper.
  3. In another bowl, beat the eggs.
  4. Dip each chicken drumstick into the egg, then roll in the almond flour mixture.
  5. Place the coated drumsticks on a baking tray and bake for 30-35 minutes, or until golden and crispy.
  6. While the chicken is baking, prepare the coleslaw. Shred the cabbage and carrot and place in a large bowl.
  7. In a small bowl, mix together the mayonnaise, Dijon mustard, apple cider vinegar, and erythritol.
  8. Pour the dressing over the shredded vegetables and mix well.
  9. Serve the crispy chicken drumsticks with the coleslaw on the side.
