Crunchy Keto Chicken Drumsticks with Coleslaw[edit | edit source]
Ingredients[edit | edit source]
- 8 Chicken Drumsticks
- 1 cup Almond Flour
- 1 tsp Paprika
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- Salt and Pepper to taste
- 2 Eggs
- 1/2 head Cabbage
- 1 Carrot
- 1/2 cup Mayonnaise
- 1 tbsp Dijon Mustard
- 1 tbsp Apple Cider Vinegar
- 1 tsp Erythritol
Instructions[edit | edit source]
- Preheat your oven to 200°C (390°F).
- In a bowl, mix together the almond flour, paprika, garlic powder, onion powder, salt, and pepper.
- In another bowl, beat the eggs.
- Dip each chicken drumstick into the egg, then roll in the almond flour mixture.
- Place the coated drumsticks on a baking tray and bake for 30-35 minutes, or until golden and crispy.
- While the chicken is baking, prepare the coleslaw. Shred the cabbage and carrot and place in a large bowl.
- In a small bowl, mix together the mayonnaise, Dijon mustard, apple cider vinegar, and erythritol.
- Pour the dressing over the shredded vegetables and mix well.
- Serve the crispy chicken drumsticks with the coleslaw on the side.
