Cured Salmon Scrambled Eggs with Chives[edit | edit source]
Ingredients[edit | edit source]
- 4 large eggs
- 2 tablespoons of heavy cream
- 1 tablespoon of butter
- 100 grams of cured salmon
- 2 tablespoons of chopped chives
- Salt and pepper to taste
Instructions[edit | edit source]
- Crack the eggs into a bowl, add the heavy cream, salt, and pepper. Whisk until well combined.
- Heat a non-stick pan over medium heat. Add the butter and let it melt.
- Pour the egg mixture into the pan. Let it cook undisturbed until it starts to set around the edges.
- Stir the eggs gently with a spatula, pushing them from the edges towards the center. Continue to cook, stirring occasionally, until the eggs are mostly cooked but still slightly runny.
- Remove the pan from the heat. The residual heat will finish cooking the eggs.
- Fold in the cured salmon and chives. Serve immediately.
