Fettuccine Zoodles is a delicious and healthy keto friendly recipe. It is a great alternative to traditional pasta dishes, and is perfect for those following a low-carb diet.
Ingredients[edit | edit source]
- 4 medium zucchini
- 2 tablespoons olive oil
- 1 teaspoon garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions[edit | edit source]
- Using a spiralizer, turn the zucchini into noodles and set aside.
- Heat the olive oil in a large pan over medium heat. Add the garlic and sauté until fragrant.
- Add the heavy cream to the pan and bring to a simmer.
- Stir in the Parmesan cheese until it melts into the cream and creates a thick sauce. Season with salt and pepper.
- Add the zucchini noodles to the pan and toss to coat in the sauce. Cook for 2-3 minutes, or until the noodles are tender.
- Serve the Fettuccine Zoodles garnished with fresh parsley.
