This is a simple and delicious keto friendly recipe for Fish with Vegetables Baked in Foil. It's a great way to enjoy a healthy, low-carb meal that's packed with flavor.
Ingredients[edit | edit source]
- 4 fish fillets
- 2 zucchini, sliced
- 2 bell peppers, sliced
- 1 onion, sliced
- 4 cloves of garlic, minced
- Olive oil
- Salt and pepper to taste
- Lemon wedges for serving
Instructions[edit | edit source]
- Preheat your oven to 400 degrees F (200 degrees C).
- Lay out 4 pieces of aluminum foil on a baking sheet.
- Place a fish fillet in the center of each piece of foil.
- Divide the sliced vegetables and minced garlic evenly among the packets, placing them on top of the fish.
- Drizzle each packet with olive oil and season with salt and pepper.
- Fold the foil over the fish and vegetables to close off the packet, sealing the edges to make a pouch.
- Bake for 15-20 minutes, or until the fish is cooked through and the vegetables are tender.
- Serve with lemon wedges.
