This is a simple and delicious keto friendly recipe for Fish with Vegetables Baked in Foil. It's a great way to enjoy a healthy, low-carb meal that's packed with flavor.

  1. Preheat your oven to 400 degrees F (200 degrees C).
  2. Lay out 4 pieces of aluminum foil on a baking sheet.
  3. Place a fish fillet in the center of each piece of foil.
  4. Divide the sliced vegetables and minced garlic evenly among the packets, placing them on top of the fish.
  5. Drizzle each packet with olive oil and season with salt and pepper.
  6. Fold the foil over the fish and vegetables to close off the packet, sealing the edges to make a pouch.
  7. Bake for 15-20 minutes, or until the fish is cooked through and the vegetables are tender.
  8. Serve with lemon wedges.
