This is a simple and delicious recipe for Instant Low Carb Raspberry Jam. It's perfect for those following a keto diet as it's low in carbs and high in flavor.

  1. Rinse the raspberries and place them in a saucepan.
  2. Add the erythritol and lemon juice to the saucepan.
  3. Heat the mixture over medium heat, stirring frequently.
  4. Once the raspberries have broken down and the mixture is bubbling, reduce the heat to low.
  5. If using, sprinkle the gelatin over the mixture and stir until it's fully dissolved.
  6. Remove the saucepan from the heat and let the jam cool.
  7. Once cooled, transfer the jam to a jar and store it in the refrigerator.
