This is a simple and delicious recipe for Instant Low Carb Raspberry Jam. It's perfect for those following a keto diet as it's low in carbs and high in flavor.
Ingredients[edit | edit source]
- 2 cups of fresh raspberries
- 1/4 cup of erythritol or other keto-friendly sweetener
- 1 tablespoon of lemon juice
- 1 teaspoon of gelatin (optional)
Instructions[edit | edit source]
- Rinse the raspberries and place them in a saucepan.
- Add the erythritol and lemon juice to the saucepan.
- Heat the mixture over medium heat, stirring frequently.
- Once the raspberries have broken down and the mixture is bubbling, reduce the heat to low.
- If using, sprinkle the gelatin over the mixture and stir until it's fully dissolved.
- Remove the saucepan from the heat and let the jam cool.
- Once cooled, transfer the jam to a jar and store it in the refrigerator.
