Italian Keto Turkey Meatballs with Zoodles[edit | edit source]
Ingredients[edit | edit source]
- 1 lb Ground turkey
- 1/2 cup Parmesan cheese, grated
- 1/4 cup Parsley, chopped
- 1 Egg
- 2 cloves Garlic, minced
- Salt and pepper to taste
- 1 tbsp Olive oil
- 1 cup Marinara sauce, sugar-free
- 2 medium Zucchini, spiralized into zoodles
Instructions[edit | edit source]
- In a large bowl, combine the ground turkey, Parmesan cheese, parsley, egg, garlic, salt, and pepper. Mix until all ingredients are well incorporated.
- Form the mixture into 1-inch meatballs and set aside.
- Heat the olive oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides, about 10 minutes.
- Add the marinara sauce to the skillet and simmer for another 10 minutes, or until the meatballs are cooked through.
- While the meatballs are simmering, cook the zoodles in a separate skillet over medium heat until tender, about 5 minutes.
- Serve the meatballs over the zoodles and enjoy!
