Keto Baked Salmon with Pesto is a delicious and healthy meal that is perfect for those following a keto diet. This recipe is easy to prepare and packed with flavor.
Ingredients[edit | edit source]
- 4 salmon fillets
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 cup basil leaves
- 1/2 cup parmesan cheese, grated
- 1/4 cup pine nuts
- 2 cloves garlic
- 1/2 cup olive oil
- Lemon wedges, for serving
Instructions[edit | edit source]
- Preheat your oven to 400 degrees F (200 degrees C).
- Place the salmon fillets on a baking sheet and drizzle with olive oil. Season with salt and pepper.
- In a food processor, combine the basil, parmesan cheese, pine nuts, and garlic. Pulse until finely chopped.
- With the motor running, slowly add the olive oil until the pesto is smooth.
- Spread the pesto over the salmon fillets.
- Bake for 15-20 minutes, or until the salmon is cooked to your liking.
- Serve with lemon wedges.
