Keto BBQ Ribs with Squash Salad[edit | edit source]

  1. Preheat your oven to 275 degrees F (135 degrees C).
  2. Season the pork ribs with salt and pepper, then coat them with the keto-friendly BBQ sauce.
  3. Place the ribs on a baking sheet and cover with aluminum foil. Bake for 2.5 hours.
  4. While the ribs are baking, prepare the squash salad. Peel and dice the butternut squash, then roast in the oven for 25 minutes.
  5. In a large bowl, combine the roasted squash, spinach, and feta cheese.
  6. In a small bowl, whisk together the olive oil, apple cider vinegar, salt, and pepper. Pour this dressing over the salad and toss to combine.
  7. Once the ribs are done, allow them to rest for a few minutes before serving with the squash salad.
