Keto BBQ Ribs with Squash Salad[edit | edit source]
Ingredients[edit | edit source]
- Ribs
- 2 lbs of pork ribs
- 1 cup of keto-friendly BBQ sauce
- Squash Salad
- 1 medium butternut squash
- 2 cups of spinach
- 1/2 cup of feta cheese
- 1/4 cup of olive oil
- 2 tablespoons of apple cider vinegar
- Salt and pepper to taste
Instructions[edit | edit source]
- Preheat your oven to 275 degrees F (135 degrees C).
- Season the pork ribs with salt and pepper, then coat them with the keto-friendly BBQ sauce.
- Place the ribs on a baking sheet and cover with aluminum foil. Bake for 2.5 hours.
- While the ribs are baking, prepare the squash salad. Peel and dice the butternut squash, then roast in the oven for 25 minutes.
- In a large bowl, combine the roasted squash, spinach, and feta cheese.
- In a small bowl, whisk together the olive oil, apple cider vinegar, salt, and pepper. Pour this dressing over the salad and toss to combine.
- Once the ribs are done, allow them to rest for a few minutes before serving with the squash salad.
