Keto Blue Cheese Chicken with Walnut Salad[edit | edit source]

  1. Preheat the oven to 200 degrees Celsius.
  2. Season the chicken breasts with salt and pepper.
  3. Heat the olive oil in a pan and sear the chicken breasts on both sides until golden brown.
  4. Transfer the chicken to a baking dish and top with crumbled blue cheese.
  5. Bake in the oven for 15-20 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
  6. While the chicken is cooking, prepare the salad. Chop the lettuce, cucumber, and tomato and toss in a bowl.
  7. Crush the walnuts and sprinkle over the salad.
  8. In a small bowl, mix together the lemon juice and crushed garlic to make a dressing. Drizzle over the salad.
  9. Serve the chicken with the salad on the side.
