Keto Blue Cheese Chicken with Walnut Salad[edit | edit source]
Ingredients[edit | edit source]
- Chicken breast - 2 pieces
- Blue cheese - 100 grams
- Walnuts - 50 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves
- Salt and pepper - to taste
- Lettuce - 1 head
- Cucumber - 1 piece
- Tomato - 1 piece
- Lemon juice - 1 tablespoon
Instructions[edit | edit source]
- Preheat the oven to 200 degrees Celsius.
- Season the chicken breasts with salt and pepper.
- Heat the olive oil in a pan and sear the chicken breasts on both sides until golden brown.
- Transfer the chicken to a baking dish and top with crumbled blue cheese.
- Bake in the oven for 15-20 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
- While the chicken is cooking, prepare the salad. Chop the lettuce, cucumber, and tomato and toss in a bowl.
- Crush the walnuts and sprinkle over the salad.
- In a small bowl, mix together the lemon juice and crushed garlic to make a dressing. Drizzle over the salad.
- Serve the chicken with the salad on the side.
