Keto Caprese Chicken is a delicious and healthy dish that is perfect for those following a keto diet. This recipe is easy to prepare and packed with flavors from fresh basil, mozzarella cheese, and ripe tomatoes.
Ingredients[edit | edit source]
- 4 chicken breasts
- 1 tablespoon olive oil
- Salt and black pepper to taste
- 2 cloves garlic, minced
- 1 cup fresh basil leaves
- 4 slices mozzarella cheese
- 2 tomatoes, sliced
- Balsamic glaze for drizzling
Instructions[edit | edit source]
- Preheat your oven to 375 degrees F (190 degrees C).
- Season the chicken breasts with salt and pepper.
- Heat the olive oil in a large oven-safe skillet over medium heat.
- Add the chicken to the skillet and cook until golden brown on both sides.
- Remove the skillet from the heat and top each chicken breast with a slice of mozzarella cheese and a few slices of tomato.
- Sprinkle the minced garlic and fresh basil leaves over the top.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and the cheese is melted.
- Drizzle with balsamic glaze before serving.
