Keto Chicken Pesto Stew with Zoodles[edit | edit source]
Ingredients[edit | edit source]
- 2 lbs Chicken breasts, boneless and skinless
- 1 cup Pesto
- 1 cup Chicken Broth
- 2 Zucchini, spiralized into zoodles
- 2 tbsp Olive Oil
- Salt and Pepper to taste
Instructions[edit | edit source]
- Season the chicken breasts with salt and pepper.
- Heat the olive oil in a large pot over medium heat.
- Add the chicken to the pot and cook until browned on all sides.
- Add the pesto and chicken broth to the pot and stir to combine.
- Cover the pot and let the stew simmer for about 30 minutes, or until the chicken is cooked through.
- While the stew is simmering, prepare the zoodles by spiralizing the zucchini.
- Add the zoodles to the stew during the last 5 minutes of cooking to heat them through.
- Serve the stew hot, garnished with extra pesto if desired.
