  1. Wash and dry the parsley and oregano. Remove the leaves from the stems.
  2. Peel the garlic cloves.
  3. In a food processor, combine the parsley, oregano, garlic, olive oil, red wine vinegar, salt, and pepper. If desired, add the red pepper flakes for a bit of heat.
  4. Pulse until the ingredients are well combined but still a bit chunky. You don't want to puree the mixture.
  5. Taste and adjust the seasoning if necessary.
  6. Serve the chimichurri immediately, or store it in the refrigerator for up to a week.
