Keto egg plant recipes[edit | edit source]
- Eggplant Parmesan: Cut eggplant into slices, salt and let sit for 30 minutes to remove excess water. Dip in beaten eggs and coat in a mixture of parmesan cheese and almond flour. Bake in the oven at 375 degrees F until golden brown.
- Grilled Eggplant Roll-Ups: Cut eggplant into thin slices, brush with olive oil and grill until tender. Fill with a mixture of ricotta cheese, herbs, and spinach, roll up and top with marinara sauce and mozzarella cheese.
- Eggplant Lasagna: Layer thinly sliced eggplant with meat or vegetable-based sauce, ricotta cheese, and mozzarella cheese. Bake in the oven at 375 degrees F until bubbly and golden brown.
- Eggplant Meatballs: Mix together ground meat, grated eggplant, parmesan cheese, egg, and spices. Form into balls and bake in the oven at 375 degrees F until cooked through. Serve with marinara sauce for dipping.
- Eggplant Curry: sauté diced eggplant, onion, and garlic in coconut oil. Add in curry powder, coconut milk, and your choice of protein like chicken or shrimp, and simmer until the eggplant is tender.
