A quick and easy recipe for those following a Keto diet, Keto Eggs on the Go is a perfect solution for a healthy, low-carb breakfast or snack.

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, whisk the eggs until well beaten.
  3. Add the cheddar cheese, bell peppers, onions, and spinach to the eggs. Season with salt and pepper.
  4. Grease a muffin tin and pour the egg mixture evenly into the muffin cups.
  5. Bake for 20-25 minutes, or until the eggs are set.
  6. Let the eggs cool for a few minutes before removing from the muffin tin.
