Keto Eyeball Casserole is a delicious and fun dish that is perfect for those following a keto diet. This recipe is high in protein and healthy fats, and low in carbs, making it a great choice for those trying to maintain a state of ketosis.
Ingredients[edit | edit source]
- 1 lb of ground beef
- 1/2 cup of onion, chopped
- 1 clove of garlic, minced
- 1 cup of spinach, chopped
- 1/2 cup of mozzarella cheese, shredded
- 1/2 cup of cheddar cheese, shredded
- 12 olives, pitted and sliced
- Salt and pepper to taste

- Preheat your oven to 375 degrees Fahrenheit.
- In a large skillet, cook the ground beef, onion, and garlic over medium heat until the beef is no longer pink.
- Stir in the spinach and cook until wilted.
- Remove from heat and stir in the mozzarella and cheddar cheese.
- Transfer the mixture to a casserole dish and top with the sliced olives to resemble eyeballs.
- Bake for 20-25 minutes, or until the cheese is bubbly and the olives are slightly roasted.
- Let cool for a few minutes before serving.
