  1. In a large bowl, combine the almond flour, erythritol, and salt.
  2. In another bowl, whisk together the eggs, almond milk, vanilla extract, and melted butter.
  3. Gradually add the wet ingredients to the dry ingredients, stirring until a smooth batter forms.
  4. Heat a non-stick pan over medium heat. Pour 1/4 cup of batter into the pan for each pancake.
  5. Cook until bubbles form on the surface, then flip and cook until golden brown.
  6. Repeat with the remaining batter.
  7. Serve the pancakes warm with your favorite keto-friendly toppings.
