This is a recipe for Keto Mexican Scrambled Eggs, a delicious and nutritious breakfast dish that is perfect for those following a Ketogenic Diet.

  1. Start by dicing the onion, tomato, and jalapeno pepper.
  2. Heat the olive oil in a pan over medium heat.
  3. Add the diced onion to the pan and sauté until it becomes translucent.
  4. Add the diced tomato and jalapeno to the pan and continue to sauté for another 2-3 minutes.
  5. In a separate bowl, beat the eggs and then add them to the pan.
  6. Cook the eggs, stirring occasionally, until they are fully cooked.
  7. Season with salt and pepper to taste.
  8. If desired, sprinkle shredded cheese over the eggs and allow it to melt.
  9. Serve the scrambled eggs with slices of avocado on top and garnish with fresh cilantro.
