Keto Roast Chicken with Broccoli and Garlic Butter[edit | edit source]

  1. Preheat your oven to 375 degrees Fahrenheit.
  2. Rinse the chicken and pat dry with paper towels.
  3. In a small bowl, combine the softened butter, minced garlic, thyme, paprika, salt, and pepper.
  4. Rub the garlic butter mixture all over the chicken, making sure to get under the skin.
  5. Place the chicken in a roasting pan and drizzle with olive oil.
  6. Roast the chicken in the preheated oven for about 1 hour and 30 minutes, or until the juices run clear when you cut between a leg and thigh.
  7. While the chicken is roasting, cut the broccoli into florets and steam until tender.
  8. Serve the roast chicken with the steamed broccoli on the side.
