Keto Rutabaga Fritters with Smoked Salmon[edit | edit source]
Ingredients[edit | edit source]
- 2 medium rutabagas
- 1/2 cup of almond flour
- 2 eggs
- 1/2 cup of chives, chopped
- 1/2 cup of smoked salmon, chopped
- Salt and pepper to taste
- 2 tablespoons of olive oil for frying
Instructions[edit | edit source]
- Peel and grate the rutabagas.
- In a large bowl, combine the grated rutabagas, almond flour, eggs, chives, smoked salmon, salt, and pepper.
- Heat the olive oil in a large frying pan over medium heat.
- Form the rutabaga mixture into small patties and fry them in the olive oil until they are golden brown on both sides.
- Serve the fritters with a side of sour cream or Greek yogurt, if desired.
