Keto Saffron Pannacotta is a delicious and creamy dessert that is perfect for those following a keto diet. This recipe is easy to prepare and is packed with flavors from the saffron and vanilla.
Ingredients[edit | edit source]
- 2 cups of heavy cream
- 1/4 cup of erythritol
- A pinch of saffron strands
- 1 teaspoon of vanilla extract
- 2 teaspoons of gelatin
- 1/4 cup of water
Instructions[edit | edit source]
- In a saucepan, combine the heavy cream, erythritol, and saffron strands. Heat over medium heat until the erythritol is dissolved.
- In a small bowl, sprinkle the gelatin over the water and let it sit for a few minutes to bloom.
- Once the gelatin has bloomed, add it to the saucepan and stir until it is completely dissolved.
- Remove the saucepan from the heat and stir in the vanilla extract.
- Pour the mixture into four ramekins and refrigerate for at least 4 hours, or until set.
- Serve the Keto Saffron Pannacotta chilled.
