Keto Saffron Pannacotta is a delicious and creamy dessert that is perfect for those following a keto diet. This recipe is easy to prepare and is packed with flavors from the saffron and vanilla.

  1. In a saucepan, combine the heavy cream, erythritol, and saffron strands. Heat over medium heat until the erythritol is dissolved.
  2. In a small bowl, sprinkle the gelatin over the water and let it sit for a few minutes to bloom.
  3. Once the gelatin has bloomed, add it to the saucepan and stir until it is completely dissolved.
  4. Remove the saucepan from the heat and stir in the vanilla extract.
  5. Pour the mixture into four ramekins and refrigerate for at least 4 hours, or until set.
  6. Serve the Keto Saffron Pannacotta chilled.
