Keto Scallops with Herb Butter is a delicious and healthy dish that is perfect for those following a keto diet. This recipe is easy to prepare and is packed with flavors from the scallops and the herb butter.

  1. Rinse the scallops and pat dry with a paper towel. Season with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the scallops and cook for 2-3 minutes on each side, until golden brown. Remove from the skillet and set aside.
  3. In the same skillet, add the butter and garlic. Cook until the butter is melted and the garlic is fragrant.
  4. Add the parsley, thyme, rosemary, and lemon juice to the skillet. Stir to combine.
  5. Return the scallops to the skillet and spoon the herb butter over the top. Cook for an additional 2-3 minutes, until the scallops are cooked through.
  6. Serve the scallops with the herb butter sauce.
