Keto Seared Salmon with Veggies
Ingredients[edit | edit source]
- 2 Salmon fillets
- 1 tablespoon Olive oil
- Salt and Pepper to taste
- 1/2 cup Broccoli florets
- 1/2 cup Bell pepper strips
- 1/2 cup Zucchini slices
- 1 tablespoon Garlic minced
- 1 tablespoon Lemon juice
- 1 tablespoon fresh Parsley chopped
Instructions[edit | edit source]
- Season the salmon fillets with salt and pepper.
- Heat the olive oil in a pan over medium heat.
- Add the salmon fillets to the pan, skin side down, and cook for 4-5 minutes on each side until seared and cooked through.
- Remove the salmon from the pan and set aside.
- In the same pan, add the broccoli, bell pepper, and zucchini. Cook for 5-7 minutes until the vegetables are tender.
- Add the minced garlic to the pan and cook for another minute.
- Drizzle the lemon juice over the vegetables and stir to combine.
- Serve the seared salmon with the sautéed vegetables and garnish with fresh parsley.
