For the Béarnaise Sauce:

  1. Season the steaks with salt and pepper.
  2. Heat the olive oil and butter in a pan over medium-high heat.
  3. Add the steaks to the pan and cook for 4-5 minutes on each side for medium-rare. Adjust the cooking time to your preferred level of doneness.
  4. Remove the steaks from the pan and let them rest.

For the Béarnaise Sauce:

  1. Combine the vinegar, wine, and shallots in a small saucepan. Bring to a simmer and cook until reduced by half.
  2. In a separate bowl, whisk the egg yolks.
  3. Slowly add the reduced vinegar mixture to the egg yolks, whisking constantly.
  4. Return the mixture to the saucepan and cook over low heat, whisking constantly, until thickened.
  5. Remove from heat and slowly whisk in the melted butter.
  6. Stir in the tarragon and season with salt and pepper.
  7. Serve the steaks with the Béarnaise sauce.
