Keto Vanilla Pannacotta is a delicious, creamy dessert that is perfect for those following a keto diet. It's low in carbs, high in fat, and absolutely delicious.
Ingredients[edit | edit source]
- 2 cups of heavy cream
- 1/4 cup of erythritol
- 1 vanilla bean or 1 teaspoon of vanilla extract
- 2 teaspoons of gelatin
- 1/4 cup of water
Instructions[edit | edit source]
- In a medium saucepan, combine the heavy cream and erythritol.
- Split the vanilla bean lengthwise and scrape out the seeds. Add the seeds and the bean to the saucepan.
- Heat the mixture over medium heat, stirring occasionally, until the erythritol is fully dissolved.
- In a small bowl, sprinkle the gelatin over the water and let it sit for a few minutes to soften.
- Once the gelatin is soft, add it to the saucepan and stir until it's fully dissolved.
- Pour the mixture into four ramekins and refrigerate for at least 4 hours, or until set.
