This is a delicious and healthy recipe for Keto Zucchini Roll Ups with Chicken Herb Butter. It's a perfect dish for those following a Keto diet.

  1. Start by preheating your oven to 375 degrees Fahrenheit.
  2. Slice the zucchini lengthwise into thin strips using a mandoline slicer or a sharp knife.
  3. In a pan, melt the butter and add the minced garlic and herbs. Cook for a few minutes until the garlic is fragrant.
  4. Add the shredded chicken to the pan and stir to combine with the herb butter. Season with salt and pepper.
  5. Lay out the zucchini strips and place a spoonful of the chicken mixture at one end of each strip.
  6. Roll up the zucchini strips and place them in a baking dish.
  7. Bake for 15-20 minutes, or until the zucchini is tender and the chicken is heated through.
