Lemon Lamb Skewers with Keto Radish Daikon Salad[edit | edit source]
Ingredients[edit | edit source]
- 500g lamb fillet, cut into cubes
- 2 lemons, juiced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 large daikon radish, julienned
- 1/2 cup cilantro, chopped
- 1/4 cup mint, chopped
- 1 tablespoon apple cider vinegar
- 1 tablespoon olive oil
Instructions[edit | edit source]
- In a bowl, combine the lamb, lemon juice, garlic, olive oil, salt, and pepper. Mix well and let marinate for at least 30 minutes.
- Preheat your grill to medium-high heat.
- Thread the lamb onto skewers and grill for 3-4 minutes on each side, or until cooked to your liking.
- In a separate bowl, combine the daikon, cilantro, mint, vinegar, and olive oil. Toss well to combine.
- Serve the lamb skewers with the daikon salad on the side.
