Loaded Baked Cauliflower Casserole[edit | edit source]
A delicious and healthy keto friendly dish, the Loaded Baked Cauliflower Casserole is a perfect side dish or main course for those following a low-carb diet.
Ingredients[edit | edit source]
- 1 large cauliflower, cut into florets
- 1 cup sour cream
- 2 cups shredded cheddar cheese
- 6 slices of cooked bacon, crumbled
- 3 green onions, chopped
- Salt and pepper to taste
Instructions[edit | edit source]
- Preheat your oven to 375 degrees F (190 degrees C).
- Steam the cauliflower florets until they are tender, about 5-7 minutes.
- In a large bowl, mix the steamed cauliflower, sour cream, 1 cup of cheddar cheese, half of the bacon, green onions, salt, and pepper.
- Transfer the mixture to a baking dish and top with the remaining cheddar cheese and bacon.
- Bake for 20 minutes, or until the cheese is melted and bubbly.
- Garnish with additional green onions if desired, and serve hot.
