A delicious and healthy keto friendly dish, the Loaded Baked Cauliflower Casserole is a perfect side dish or main course for those following a low-carb diet.

  1. Preheat your oven to 375 degrees F (190 degrees C).
  2. Steam the cauliflower florets until they are tender, about 5-7 minutes.
  3. In a large bowl, mix the steamed cauliflower, sour cream, 1 cup of cheddar cheese, half of the bacon, green onions, salt, and pepper.
  4. Transfer the mixture to a baking dish and top with the remaining cheddar cheese and bacon.
  5. Bake for 20 minutes, or until the cheese is melted and bubbly.
  6. Garnish with additional green onions if desired, and serve hot.
