This is a delicious and healthy recipe for a Low Carb Banana Blueberry Pancake. It's perfect for those following a keto diet as it's low in carbs and high in healthy fats.

  1. Mash the banana in a bowl until it's smooth.
  2. Add the eggs to the banana and mix well.
  3. In a separate bowl, mix the almond flour, coconut flour, baking powder, and salt.
  4. Add the dry ingredients to the banana and egg mixture and mix until well combined.
  5. Heat a pan over medium heat and add a small amount of butter.
  6. Pour a small amount of the batter into the pan and add a few blueberries on top.
  7. Cook until the pancake is golden brown on the bottom, then flip and cook the other side.
  8. Repeat with the remaining batter and blueberries.
