Low Carb Beef Burrito with Pico de Gallo[edit | edit source]
Ingredients[edit | edit source]
- 1 lb Ground beef
- 1 Avocado, sliced
- 1 cup Cheese, shredded
- 1 Lettuce, shredded
- 4 Low-carb tortillas
- Salt and Pepper to taste
For the Pico de Gallo[edit | edit source]
- 2 Tomatoes, diced
- 1 Onion, diced
- 1 Jalapeno, diced
- 1/4 cup Cilantro, chopped
- Lime juice from 1 lime
- Salt to taste
Instructions[edit | edit source]
- Brown the ground beef in a pan over medium heat. Season with salt and pepper.
- While the beef is cooking, prepare the pico de gallo by combining the tomatoes, onion, jalapeno, cilantro, lime juice, and salt in a bowl. Mix well and set aside.
- Warm the low-carb tortillas in a dry skillet over medium heat.
- Assemble the burritos by placing a portion of the cooked beef on each tortilla. Top with shredded cheese, lettuce, avocado slices, and a generous spoonful of pico de gallo.
- Roll up the burritos and serve immediately.
