Low Carb Beef Enchiladas[edit | edit source]
Low Carb Beef Enchiladas are a delicious and healthy alternative to traditional enchiladas. They are packed with protein and fiber, and are perfect for those following a keto diet.
Ingredients[edit | edit source]
- 1 lb ground beef
- 1 cup cheddar cheese, shredded
- 1/2 cup onion, chopped
- 1/2 cup green bell pepper, chopped
- 1 can (10 oz) enchilada sauce
- 1/2 cup sour cream
- 1/2 cup cream cheese
- 8 low carb tortillas
- Salt and pepper to taste
Instructions[edit | edit source]
- Preheat your oven to 375 degrees F (190 degrees C).
- In a large skillet, cook the ground beef over medium heat until no longer pink. Drain the excess fat.
- Add the onion and green bell pepper to the skillet and cook until softened.
- Stir in the enchilada sauce, sour cream, and cream cheese. Season with salt and pepper.
- Spoon the beef mixture onto each tortilla and roll up tightly. Place the enchiladas seam side down in a greased baking dish.
- Sprinkle the shredded cheddar cheese over the top of the enchiladas.
- Bake for 20-25 minutes, or until the cheese is melted and bubbly.
