Low Carb Beef Enchiladas[edit | edit source]

Low Carb Beef Enchiladas are a delicious and healthy alternative to traditional enchiladas. They are packed with protein and fiber, and are perfect for those following a keto diet.

  1. Preheat your oven to 375 degrees F (190 degrees C).
  2. In a large skillet, cook the ground beef over medium heat until no longer pink. Drain the excess fat.
  3. Add the onion and green bell pepper to the skillet and cook until softened.
  4. Stir in the enchilada sauce, sour cream, and cream cheese. Season with salt and pepper.
  5. Spoon the beef mixture onto each tortilla and roll up tightly. Place the enchiladas seam side down in a greased baking dish.
  6. Sprinkle the shredded cheddar cheese over the top of the enchiladas.
  7. Bake for 20-25 minutes, or until the cheese is melted and bubbly.
