Instructions[edit | edit source]

  1. Heat 1 tablespoon of olive oil in a large pan over medium heat. Add the beef strips and cook until browned. Remove from the pan and set aside.
  2. In the same pan, add the remaining olive oil, onion, garlic, and mushrooms. Cook until the onions are translucent and the mushrooms are tender.
  3. Add the beef broth to the pan and bring to a simmer. Stir in the sour cream and Dijon mustard. Season with salt and pepper.
  4. Return the beef to the pan and simmer for 10 minutes, until the sauce has thickened.
  5. While the beef is simmering, heat a separate pan over medium heat. Add the cauliflower rice and cook for 5-7 minutes, until tender.
  6. Serve the beef stroganoff over the cauliflower rice.
