Low Carb Beef Stroganoff with Cauliflower Rice[edit | edit source]
Ingredients[edit | edit source]
- 500g beef strips
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 200g mushrooms, sliced
- 1 cup beef broth
- 1 cup sour cream
- 2 tablespoons Dijon mustard
- Salt and pepper to taste
- 1 head of cauliflower, riced
- 2 tablespoons olive oil
Instructions[edit | edit source]
- Heat 1 tablespoon of olive oil in a large pan over medium heat. Add the beef strips and cook until browned. Remove from the pan and set aside.
- In the same pan, add the remaining olive oil, onion, garlic, and mushrooms. Cook until the onions are translucent and the mushrooms are tender.
- Add the beef broth to the pan and bring to a simmer. Stir in the sour cream and Dijon mustard. Season with salt and pepper.
- Return the beef to the pan and simmer for 10 minutes, until the sauce has thickened.
- While the beef is simmering, heat a separate pan over medium heat. Add the cauliflower rice and cook for 5-7 minutes, until tender.
- Serve the beef stroganoff over the cauliflower rice.
