Low Carb Blueberry Pancakes[edit | edit source]
Ingredients[edit | edit source]
- 1 cup of Almond Flour
- 1/4 cup of Coconut Flour
- 1/2 teaspoon of Baking Powder
- 2 tablespoons of Erythritol
- 4 large Eggs
- 1/4 cup of unsweetened Almond Milk
- 1/2 cup of fresh Blueberries
- Butter for frying
Instructions[edit | edit source]
- In a large bowl, combine the almond flour, coconut flour, baking powder, and erythritol.
- In another bowl, whisk the eggs and almond milk together.
- Gradually add the dry ingredients into the wet ingredients, stirring until a batter forms.
- Gently fold in the blueberries.
- Heat a non-stick pan over medium heat and add a small amount of butter.
- Pour 1/4 cup of batter onto the pan for each pancake.
- Cook until bubbles form on the surface, then flip and cook until golden brown.
- Repeat with the remaining batter.
- Serve warm with your favorite Keto-friendly syrup.
