Low Carb Cauliflower Hash Browns is a delicious and healthy keto friendly recipe. It is a perfect breakfast option for those who are on a low-carb diet or ketogenic diet.
Ingredients[edit | edit source]
- 1 medium cauliflower
- 2 large eggs
- 1/2 cup of cheddar cheese, shredded
- 1/4 cup of green onions, finely chopped
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 2 tablespoons of olive oil
Instructions[edit | edit source]
- Start by washing and drying the cauliflower. Cut it into florets and pulse in a food processor until it resembles rice.
- Place the cauliflower rice in a microwave-safe bowl and microwave for 2 minutes. Let it cool.
- Once cooled, transfer the cauliflower to a clean kitchen towel and squeeze out as much liquid as possible.
- In a large bowl, combine the squeezed cauliflower, eggs, cheddar cheese, green onions, salt, and pepper. Mix until well combined.
- Heat the olive oil in a large non-stick skillet over medium heat.
- Scoop a 1/4 cup of the cauliflower mixture into the skillet and flatten with a spatula. Cook until golden brown, about 3-4 minutes per side.
- Repeat with the remaining mixture.
- Serve the hash browns warm with your favorite keto-friendly sauce.
