  3. In the same pan, cook the halloumi cheese slices until they are golden brown on both sides. This should take about 2 minutes per side.
  4. In a large bowl, combine the cooled cauliflower, parsley, mint, tomatoes, and cucumber.
  5. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour this dressing over the cauliflower mixture and toss to combine.
  6. Top the tabbouleh with the cooked halloumi cheese and serve.
