Low Carb Cauliflower Tabbouleh with Halloumi Cheese is a delicious and healthy keto friendly recipe. This dish is packed with fresh herbs, crunchy cauliflower, and salty halloumi cheese, making it a perfect choice for those following a low carb or keto diet.
Ingredients[edit | edit source]
- 1 large cauliflower, cut into florets
- 200g halloumi cheese, sliced
- 1 cup fresh parsley, chopped
- 1/2 cup fresh mint, chopped
- 2 tomatoes, diced
- 1 cucumber, diced
- 1/4 cup olive oil
- Juice of 1 lemon
- Salt and pepper to taste
Instructions[edit | edit source]
- Start by preparing the cauliflower. Place the florets in a food processor and pulse until they resemble couscous.
- Heat a large pan over medium heat. Add the cauliflower and cook for 5-7 minutes, or until it's tender. Set aside to cool.
- In the same pan, cook the halloumi cheese slices until they are golden brown on both sides. This should take about 2 minutes per side.
- In a large bowl, combine the cooled cauliflower, parsley, mint, tomatoes, and cucumber.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour this dressing over the cauliflower mixture and toss to combine.
- Top the tabbouleh with the cooked halloumi cheese and serve.
