Low Carb Cod with Creamy Dijon Sauce and Crispy Bacon is a delicious keto friendly recipe that combines the delicate flavor of cod with a rich and creamy dijon mustard sauce. Topped with crispy bacon, this dish is sure to satisfy your taste buds while keeping your carb intake low.

Ingredients[edit | edit source]

  • 4 cod fillets
  • 4 slices of bacon
  • 1 cup of heavy cream
  • 2 tablespoons of dijon mustard
  • Salt and pepper to taste
  • 2 tablespoons of olive oil
  • 1 tablespoon of chopped fresh parsley

Instructions[edit | edit source]

  1. Preheat your oven to 400 degrees F (200 degrees C).
  2. Season the cod fillets with salt and pepper.
  3. Heat the olive oil in a large oven-safe skillet over medium heat.
  4. Add the cod fillets to the skillet and cook for 2-3 minutes on each side, until lightly browned.
  5. Remove the cod from the skillet and set aside.
  6. In the same skillet, cook the bacon until crispy. Remove from the skillet and set aside.
  7. In the same skillet, add the heavy cream and dijon mustard. Stir to combine and bring to a simmer.
  8. Return the cod to the skillet and spoon some of the sauce over the fillets.
  9. Transfer the skillet to the preheated oven and bake for 10-12 minutes, until the cod is cooked through.
  10. Crumble the crispy bacon over the top of the cod and sprinkle with chopped parsley before serving.
