Low Carb Cream of Pumpkin Soup is a delicious, hearty, and keto-friendly meal. It's perfect for those on a ketogenic diet as it's low in carbs and high in fats. This recipe serves 4.
Ingredients[edit | edit source]
- 1 medium pumpkin
- 2 tablespoons of olive oil
- 1 medium onion, chopped
- 2 cloves of garlic, minced
- 1 cup of chicken broth
- 1 cup of heavy cream
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions[edit | edit source]
- Preheat the oven to 200°C (400°F). Cut the pumpkin into halves, remove the seeds and roast in the oven for about 45 minutes, or until soft.
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until soft and fragrant.
- Scoop out the pumpkin flesh and add it to the pot. Stir well to combine with the onion and garlic.
- Add the chicken broth to the pot and bring to a boil. Reduce the heat and simmer for about 15 minutes.
- Use a blender to puree the soup until smooth. Return the soup to the pot.
- Stir in the heavy cream and season with salt and pepper. Heat the soup for a few more minutes, but do not let it boil.
- Serve the soup hot, garnished with fresh parsley.
